At Duchally Country Estate we take great pride in being able to use the best produce from the local area and across Scotland in our cooking. We are proud and delighted to have achieved VisitScotland’s Taste our Best Award as recognition of our policy for sourcing high quality food and drink and using these products.
Below is a summary of the produce used in our menus where possible and in season.
Fish and Seafood
Our seafood, and smoked salmon comes from George Campbell and Sons in Perth who handpick their seafood each day from the fish markets around Scotland, where the produce has been landed from boats fishing in the North Sea and the Atlantic Ocean. All our fish is ordered daily by our chef and his team to ensure that our guests enjoy the freshest produce that the seas around Scotland have to offer. Our smoked salmon is Highland Smoked Salmon from Fort William. Our haddock is caught in the North Sea and off the west Coast of Scotland and our halibut is organically farmed on the Isle of Gigha.
Simon Howie, who are based along the road from us in Dunning, supply us with our butcher meat. All their products are Scottish produced and they can trace them from field to shop and assure the highest quality and care at all stages of the process. Simon Howie’s black pudding, sausages and haggis are always used at breakfast time.
Our game products are supplied by Ochil Foods from Aberuthven who use Scottish suppliers for their produce.
Fruit and Vegetables
Our fruit and vegetables are supplied by Mark Murphy & Partner Ltd who pride themselves in sourcing and supplying Scottish seasonally grown produce and are committed to supporting local farmers and producers whenever possible. They are based in Midlothian and deliver to us on a daily basis. Our seasonal local soft fruits and berries are from Perthshire and Fife and are supplied to us by Ochil Foods.
Dairy and Eggs
We get our free range eggs from Gloagburn Farm near Perth. They deliver to us regularly during the week and their hens are fed on food that includes wheat grown on their farm.
Dairy products like milk, cream and butter are from D & D Dairies in Crieff. Their milk comes from their farm and other Perthshire dairy farms. Our Scottish yoghurts are also supplied by them.
We use a wide range of Scottish Cheeses such as Smoked Applewood Cheddar (mature cheddar traditionally smoked over apple wood chips), Dunsyre Blue (blue cow’s milk cheese), Black Crowdie (cream cheese rolled in Scottish pinhead oatmeal and crushed black peppercorns) and Howgate Brie (a traditionally made brie).
Preserves and Honey
We use Scottish jams and Scottish honey which is from Bridge of Cally.
Bread and Baking
Our desserts, scones and homemade bread are made in-house using Scottish eggs and dairy products. Our homemade oatcakes are made using oatmeal from Cupar, Fife.
