CLC Duchally Country Estate sous chef Ryan Martin won a bronze medal in his first cookery competition outside of his home country of Scotland.
Ryan travelled to IFEX 2014, Northern Ireland’s premier showcase for the world of cuisine, where over 220 chefs pitted their culinary talents against each other over the three days of the event, which was held in March.
With a delicious sounding pan seared Sea Bream, duo of cauliflower, hazelnut crumble and sea herbs, Ryan secured his place among the winners in the Senior Open Free Style Fish class. And he was up against chefs from as far afield as South Africa and Estonia!
“It was pretty cool competing against people from around the world as you got to see different styles and techniques. My dish evolved from a basic fish base and I had been working on it for over a year. The experience was exciting, but nerve wracking,” said Ryan.
Resort manager Graeme MacDonald added: “We have a reputation for serving fine food in our restaurant at CLC Duchally Country Estate and it is thanks to the dedication and skills of our team, demonstrated clearly by Ryan on this occasion. His personal win adds to those awards for cuisine the resort already holds. He did us proud.”
